Sharpening Steels.
Sharpening steels are made from extremely hard chrome-vanadium steel to guarantee long-term wear resistance. In addition they are magnetized to hold metal slivers from sharpening. Sharpening steels come in different fineness grades. The medium fine-cut is best suited for household and restaurant use. Each square millimeter has six to seven tiny teeth responsible for the sharpening action. A sharpening steel is long enough to whet a large chef’s knife with one stroke.
Sharpening with the sharpening steel.
Take the steel and hold it slightly inclined (from the body). Guide the knife lightly (!) at an angle of about 15–20° in one stroke down the steel along the entire length of the blade. Alternate the motion on both sides until the knife is sharp again.
