These remarkable patatas fritas - or potato potato chips - come from the Spanish manufacturer La Santamaria. Less is more with them, as they are made from just four ingredients: the best potatoes, fried in olive oil and a little sunflower oil and then seasoned with salt. They are therefore not over-seasoned and the natural taste of the potatoes comes into its own, as does the fresh note of the olive oil.
