A balanced solution of pure spring water and Celtic sea salt gently activates the germination process in these hand-picked walnuts from the Shumen Plateau in Eastern Bulgaria. Bitter substances are carefully washed out in the process. In combination with gentle drying at a maximum temperature of 65 °C, the taste is perfected.
Delicious nut creations: 2DiE4
Since 2012, nut creations that are second to none have been produced in the foothills of the Bavarian Alps - under the name 2DiE4. The abbreviation stands for the English phrase "to die for", which describes something that is so irresistible that you could (figuratively) die for it. With 2DiE4, this name literally says it all. One reason for this is the carefully selected ingredients. All the nuts are of raw food quality and are organically grown in traditional cultivation areas. They are harvested gently and opened without heat. We know the farmers personally, as well as their plantations and the quality of the nuts. The sea salt used comes from Croatia and Brittany and the water comes from the farm's own spring.
Activation: fermented for full enjoyment
The decisive factor for enjoyment, however, is activation, as all nuts taste bitter "on purpose" to protect them from being eaten by animals and humans. When the nuts begin to germinate, however, they drop these chemical defense mechanisms. 2DiE4 takes advantage of this fact by "activating" the nuts, which in principle corresponds to traditional fermentation in two stages. In the first step, the nuts are soaked in a sea salt solution for several hours. This starts the germination process and the bitter substances disappear. In the second step, the nuts are placed in the drying oven, where they are dried at a maximum air temperature of 65 °C - enzymes, proteins and nutrients are retained. Those who have not yet tried the activated nuts might be inclined to compare them with conventional nuts, as they look similar. However, nothing could be further from the truth: Their full aroma and distinct umami flavor are simply irresistible.
