General Information
Dripping Oil from Liguria: Extracted Without Pressing.
This mild, viscous and exceedingly fruity, yellow-green dripping oil escapes from olives that have been freshly harvested between November and March during their passage along the conveyer belt frame – before the first press – a process you’ll find only in small oil mills. The oil has a slightly sweet scent, with aromas of dried fruits and tea, and it tastes nutty, harmonious and buttery, like artichokes and ripe fruit. The ROI oil mill, founded in 1900, extracts just 8-10 litres of this precious oil from over 400 kg of olives. Chefs prefer it for cold dishes, antipasti, and fresh salads and use it in the seasoning of fish or braised white meat as well as with fruits and desserts.

Since time immemorial olive oil has been known for its riches in flavours depending on the olive variety, the soil and climate of the cultivation area and the harvest time. Even the age of the tree varies the taste, colour and character of the oil. But with the boom of this "green gold," something happened which usually happens when a finite raw material becomes an infinite one overnight – it has been tampered with and manipulated.
Those who are interested in really good olive oil insist on oil from mills using traditional methods, from oil millers whose capacity may be small, but who make up for it with the great ethos of their craft. Some of them even produce under the label of protected and controlled indications of origin – DOP (Denominazione di Origine Protetta) in Italy, AOC (Appellation d'Origine Contrôlée) in France. The olives used for these oils must originate from the geographical area in question, and the oil must be obtained in a traditional way in the same region, all the while adhering to clearly defined quality standards. The result: oil of the highest quality, a high degree of differentiation, balanced flavours while at the same time low yields leading to smaller quantities.
