Königsberg Marzipan. Almonds almost in pure form
Königsberger Marzipan is characterized by its extraordinarily juicy texture and its particularly pronounced almond flavor. Responsible for this is the original recipe, unchanged to this day, of the Pomatti brothers - who founded the first confectionery with marzipan production in Königsberg in 1809 - according to which our Sinsheim-based manufacturer prepares it to this day. His marzipan consists primarily of almonds, to which is added sugar and a little rose water. He uses only Mediterranean almonds, which contain a natural proportion of bitter almonds and are therefore more aromatic. Finally, the taste of Königsberg marzipan is rounded off by another specific feature - scarfing. In this process, the shaped marzipan is briefly baked in the oven at a high top heat until they take on a goldenbraune color on top. During this process, the marzipan caramelizes slightly and develops roasting substances that give Königsberg marzipan its special aroma. Since it contains no preservatives and comparatively little sugar, the Königsberger Marzipan is naturally not excessively long shelf life.
