Strictly speaking, this sturdy utensil made of laboratory porcelain is not a mortar, but a grating bowl – recognizable by its slightly roughened inner surface. The “partner tool” used for grinding and crushing herbs, spices and (nut) kernels here is not a pestle with a smooth surface, but one with a roughened grating surface. The grated material is therefore cut rather than crushed and retains both flavour and aroma while the sintered, unglazed porcelain does not absorb any liquid and always remains neutral in taste. Besides, the bowls are perfect for making herb pastes, Italian pesto, mustard or even marzipan. You’ll find grating bowls of this size rather exclusively in specialized stores for laboratories – or order them from us.
