Bakers* use a brush like this for two things: they use it to "dust" their dough pieces to remove excess flour before putting rolls and bread in the oven. They also use baking brushes to achieve a shiny crust. For this purpose, the dense trim of horse hair is dipped in a little water. The moistened natural hair is able to dissolve starch from the flour - with the effect of creating an appealing shine during baking. Our specimen comes in the usual good quality from Iris Hantverk in Sweden. The trim is drawn in by hand and carefully lashed down, the brush body with hanging hole is made of oiled birch wood. Tip: Equally well with the pastry brush homemade pasta sheets can be freed from excess flour before further processing.
