Although spaghetti is considered a somewhat delicate dish in terms of adherence to table manners, it is probably the best-known Italian pasta shape in the world. Accordingly, they are prepared in many different ways: with tomato and cream sauces, with garlic and olive oil, with fried bacon, with mussels and much more.

Since 1990 Carla and Carlo Latini have been producing artisan pasta of the highest quality in the Marche region of Italy. A keen sense for the processing of traditional durum wheat varieties and short supply chains are the guarantee of quality. This is how the best pasta is created, with convincing color, taste, aroma and texture. Incidentally, the name of the product line 600.27 originally comes from the fact that the Latinis have produced more than 27 types of spaghetti from no less than 600 durum wheat varieties - with the aim of finding the optimal combination for the perfect pasta.
What makes good pasta
To make good pasta requires selected ingredients and craftsmanship. The basis is non-standard durum wheat varieties, which combine their best properties in the flour mixture. When water is added to the flour, kneading at a maximum of 35 °C (and only then) causes the proteins of the grain to form glutin, which is essential for the gelatinization of the pasta during cooking. The dough, prepared in different ways depending on the pasta format, is slowly pressed through bronze scribes, resulting in a rough surface that allows the pasta to better combine with the sauce. Finally, the pasta is dried, a process that takes several days for artisanal producers - at temperatures that never exceed 60°C. To produce the best possible pasta in this way, it takes decades of experience.
