They then also exceed every expectation that can be placed on a proper cheese slicer: Not only the geometry, curvature and thickness of the planing blades have been matched to each other in decades of optimization, but also the cutting width and grind of the blades - you can't do any better. The cutting strength is determined by the pressure exerted on the spring-elastic planing blade.

The Bjørklund cheese slicer with short blade has less surface contact with the cheese and is therefore not so prone to sticking to it. This makes it ideal for cutting less mature cheeses.
