Three in one. The palette knife
For good reason, the blade of this knife is so finely ground and sharpened - precisely down to one millimeter. Cream pies, intricately layered cakes or delicate puff pastries can be cut with it without hurting the crumb or even affecting the topping and decoration. The blade is elastic enough to be used beforehand like a kitchen palette for spreading cream, buttercream and chocolate coating. And in case a cake server is not at hand, the knife still replaces it as well, because the blade is flexible and wide enough to perform this function. Only for Manufactum, the handle scales of the palette knife are made of steamed and finely polished apple tree wood.

A frosting spatula with a highly sharpened blade that cuts cream cakes or delicate puff pastry cleanly. The knife is part of Robert Herder’s Solingen knife series “Windmühlenmesser” (windmill knives). It features a rustproof blade made of chrome-molybdenum-vanadium steel plus handle scales made of steamed and polished apple tree wood. Overall length 32.5 cm, blade length 18 cm. Weight 90 g.
