He missed the Neapolitan coffee typical of his hometown, which he knew from the past and which, simply by virtue of its bean selection, had a characteristic sweetness and nuttiness that made it easy to drink "amaro," or without sugar. Without further ado, he decided to revive this coffee. He mixes four parts Arabica with one part Robusta beans and roasts the blend rather lightly for Neapolitan standards - with truly amazing results.
